Pineapple Quince are the size of a large apple and fairly round or pear shaped. Once ripe, the skin will turn from green to yellow. Its firm textured flesh turns from light pink to purple, becoming softer and sweeter after cooking. Excellent when used in jellies, jams and pies. With its wonderfully intense sweet-sour flavor, it is a wonderful baking alternative to apples.
