I have access to plenty of quinces. What are some fantastic jams and other recipes people could share with me using this fabulous fruit?

fruit cobbler.
2-3 cups fruit
cook to taste
mix together:
1 cup flour
3/4 cup sugar
3/4 cup milk (can substitute with plain, non-dairy coffee creamer)
1/2 teaspoon salt
1 1/2 teaspoon baking powder
in a 8x8x2 or 9x9x2 pan (Pyrex works great) put 1/4 cup butter or margarine then put in a 350 oven until melted
pour batter into the pan, the pour the fruit in the middle
bake for 30 for light crust or 45 for a darker, more caramelized one
enjoy

I suppose technically it's a jelly, because it doesn't have pieces of quince in it, but it's not clear like a jelly, so I call it jam Quinces contain a lot of natural pectin, so you don't need to add any. However, you will need to keep checking the set while you cook it - use the cold plate test to do this. Check the set after the initial 20 minutes of cooking, and then every 10 minutes after that. Do not give up - this jam has to cook for a while. It may take up to 50 minutes for the jam to reach the "set" point. Just keep cooking it down. The jam will turn a reddish-brown color as it cooks.

Reduce heat to a low simmer, cover and simmer for 2 to 3 hours, stirring occasionally (2 hours will do the trick, but I like to let it simmer for 3, so the fruit is very soft).
2Using a fine sieve, strain the "juice" from the pulp. The "juice" can vary from an actual juice to a thin puree - it depends on if the fruit breaks down or not. Press on the fruit with the back of a large spoon to extract all the juice.If some of the pulp squeezes through the sieve and into the juice that's fine. If you get more than the 6 cups needed for this recipe you can freeze it to use later.
3Place two or three small saucers in the freezer. You will use these later to check the set of the jam.
4In a preserving pan, combine the quince juice, juice and zest of the orange and the lemon, spices, %26amp; sugar. Bring to a boil and continue cooking on medium-high heat for about 20 minutes, stirring gently. Check the set - it may take up to 50 minutes of simmering over medium high heat for the jelly/jam to reach the set stage - use the cold plate test to check set - when a drop placed on the plate "wrinkles" when you nudge it with your finger it is done. 2 cups sugar
1/4 cup water
Wrap quince peels and cores in cheesecloth and tie to secure well. In a saucepan combine bundle of peels along with quinces, sugar and water and cook over medium heat until mixture comes to a simmer. Reduce heat to low and continue to cook until quinces are very soft, about 1 1/2 hours. Remove from heat.
Preheat oven to 175 degrees. Discard cheesecloth bundle and transfer cooked quinces to the bowl of a food processor and process until smooth. Transfer mixture to a small baking dish or loaf pan and dry paste in the oven for 15 hours. (This drying procedure can be spread over several days.)

Flowering Quince Questions?
does anyone know much about this species. i've heard good and bad about it but the flowers are so pretty i am thinking about planting it. wondering about your experiences. also wondering what zones it is hardy to, i live in zone 5.

I have 2 of these bushes...and I love them. I live in zone 7 (Indiana, US) and mine are fine. They lose their leaves in the winter but in Spring the new leaves are reddish, then comes the profuse red blooms. Hummingbirds are very attracted to flowering quince. And many of my other birds spend time in the quince bushes cleaning their beaks. They do not produce fruit, though...they are ornamental only. Plant yours in full sun, if possible. It will do best there.
Watch out for thorns, though, if you prune.
They make great hedge rows or single plantings.

What is the best way to lose weight.? I am having a quince and I have to slim down.Help?
Don't put a lot of pressure on yourself and on your body by starving and working yourself to death.
Get rid of high sugar food w/no nutrition, esp soda.
Walk, run, dance, whatever, just get moving and move a little more every couple of days.
Now comes the sneaky part. Go to Macy's or Dillards and try on a one-piece underwear set--like a teddy--that has lots of stretch and control. A lot of girls wear that to the prom (it provides support without straps). It can go down to your knees if necessary, and it can put a waistline on someone as overweight as me!!

Reply:Hi. Basically cardio and/or diet. This is like a ratio: if you do a lot of cardio (6 or 7 days a week), you can get away with having a few treats here and there. Or, if you don't want to do as much cardio, you can diet (3 to 5 small portioned meals, less treats). Therefore, the best way to lose weight is cardio and diet at the same time. This will no doubt make you lose fat. Cardio burns off calories. But dieting will help keep the weight off. However, in my opinion, it's best to do cardio anyways because running/jogging/walking can do no harm to your body (unless unfavorable weather conditions permit or you overdue it).
Also, weightlifting can help increase your metabolism. If you run, the best exercise that can make you lose weight fast are deadlifts/squats/lunges/leg extensions/etc., anything that works the legs. The reason for this is because the legs are your body's largest muscle group, and therefore the most calories are burned because of the legs. The legs have large muscles which means it needs more calories in order to function. Therefore, if you build muscle and/or try to get the legs into better shape, your body will no doubt start burning more calories when you run/jog/walk because of the added muscle mass.
Let's say you drive a truck. Well, it probably burns a certain amount of gasoline. Then let's say we want to tow a boat. Well, since the engine has to work harder, it will no doubt burn more gasoline at a faster rate than before. The more mass, the more calories burned. This doesn't mean like huge muscles--it could be as simple as getting your body in shape that will give you access to burning more calories.

Don't eat 4 hours before bedtime. Avoid refined sugars and starches (white pasta, white bread). Avoid fruit juice and eat whole fruit instead.
Drink a lot of water and get a lot of sleep. Staying up late increases your body's creation of grelin which is a hormone that increases your appetite. Also, try to stay positive. Depressed people tend to gain weight because the theory goes that part of the thalamus in your brain has an area that controls feeding behavior. There are drugs that target that area but they aren't approved by the FDA in this country yet (plust they have side effects) Get sleep, stay healthy
Reply:don't know what a 'quince' is but I found Pilates a fantastic was to slim down and also feel really good. What I love is that all exercises are done slowly. And the Pilates saying is "if it hurts, it's your body is telling you to stop"! It goes without saying that you must also eat properly. Good Luck
