The first quince of the season, a short season at that, and I'm about to go away! I had to seize the opportunity.





For the uninitiated, and sadly there are many in modern urban America, quince are the fruit of a tree of the apple family. They look somewhat like large green apples with an apple/pear aroma. The flesh is woody, and cannot be eaten raw. Quince are always cooked, either whole as vegetables, or as jelly, jam, or fruit leather (a great favorite of mine).





To cook it as a vegetable, a quince should be halved or quartered, peeled, and cored carefully. The area surrounding the seeds, which in apples is clearly visible but has the same texture as the rest of the fruit, is not as easy to see in a quince and it always remains woody no matter how well cooked. It is important to trim it away completely, or the quince will have gritty bits in it.





The quince is best steamed first until it is completely tender (a skewer penetrates without difficulty), which takes 30 to 45 min. Baking is too slow, and dries it too much.





I placed the steamed quince pieces in a shallow dish in the oven next to the roasting beef, and basted it with a mixture of the juice and strained pulp of blackberries, with a little lemon juice. It is possible to glaze the pieces with a little sugar and to caramelize it under the broiler, but I did not go to such extremes.





The beef was smeared lightly with a mixture of a little Roquefort and crushed garlic, and placed in a roasting plastic bag at 325 F to cook until rare to medium rare (check with a meat thermometer: internal temperature of 125 F).





To drink: pink lemonade. There will be plenty of beer tomorrow!

Costume ideas for a theaterical production??

I have a brown piece of material that basicially looks like a dress and i somehow have to make it look like a "Court" or "Royal" thing for Midsummers night dream. I'm peter quince but since we didnt have enough guys im just Quince but how can i make my costume look like im a poor actor but yet tryin to match the ppl of the court? any ideas? anything helpful is welcome

As far as the costume you might try some


decorative cord or ribbon wrapped around


the sleeves or waist.





Depending upon your production you may


want to make use of carpenter props as well.


Specifically a wooden mallet and wedges or


something more modern. Coordinate with


the director.





MSND is a fun production. When the time


comes to direct the mechanicals you may


want to consider a costume of the old silent film directors -


jodhpurs/breeches, boots, riding crop and small


megaphone. Obviously this is VERY interpretive and well


outside the scope of your brown material.

Why do quinces turn pink/red when they're cooked for a long time?

"When quinces are cooked, the heat and the acids in the fruit convert the colourless leucoanthocyanin pigments to red anthocyanins, thus turning its flesh from pale yellow to a pink or red."

Reply:Well, I gotta say Selena Gomez looks damn gorgeous with that hairstyle, (or any other one for that matter). I think that the soft curls would look better. That way you look different, but not drastically so, and you'll probably get a lot more compliments if you don't look like you simply slept with a bunch of curlers in your hair. I think they would both look pretty, and it's totally your choice, but I think the softer curls might be more well received. Have fun at your party!

what latino countrys is it common to because i am cuban but never had one when i was 15 and dont re-call any other girl in the family to of had one
